Dendeng Batokok Lado Mudo (Green Chili Beef Jerky)

Dendeng refers to thinly sliced dried meat in Indonesian cuisine. It is similar to jerky. There are many types of beef jerky (dendeng) in Indonesia, but the Padang cuisine version — probably the most popular dendeng dish in Indonesia — is called Dendeng Balado or Dendeng Batokok, and is a speciality from Padang, West Sumatra. It is made from beef which is thinly cut then dried and fried before adding chillies and other ingredients.

Ingredients
  

Ingredients:

  • 500 gr Beef (thinly cut with a thickness of approximately 1 cm)
  • 100 gr Big Green Chili
  • 10 pcs Green cayenne pepper (You can add or subtract according to taste, depending on how spicy you want)
  • 75 gr Asian shallots
  • 4 cloves Garlic
  • 1 pcs Lime
  • a pinch of Salt
  • Cooking oil
  • 1 pcs Lemongrass
  • 3 pcs Bay leaves
  • 3 pcs Kaffir lime leaves
  • 300 ml Water

Spice Blend Ingredients:

  • 1 tsp Ground Coriander
  • ½ tsp Nutmeg
  • 2 cloves Garlic
  • 2 cm Ginger
  • 5 cm Galangal

Instructions:

  • Finely chop the spice blend with a food processor until the texture becomes smooth. Heat a pan and add some oil, add the spice blend until fragant. Add Lemongrass, Bay leaves and Kaffir lime leaves, stir it again for about 2 minutes.
  • Add the beef and stir it for about 3 minutes then add water. Cook until the beef is cooked and tender. Crush/pound the beef with a tool such as meat tenderizer or mortar & pistil then fry it with a little bit of oil, only until brown but not crunchy. Set aside
  • Using a mortar, blend the Big Green Chili, Green cayenne pepper, Asian shallots, Garlic and a pinch of salt. Not necessary until smooth, enough until everything is pounded and mixed evenly (you can see photos for an estimate). If you don't have a mortar it can be blended using a food processor, but still not until it is smooth.
  • Heat the pan and add some oil. Add the chili mixture and cook until fragant, then add lime juice. Add the beef, then stir it for about 5 minutes.
    Enjoy with warm rice, for those of you lovers of spicy cuisine, this dish is one of the culinary paradise.
