Rawon is from East Java, Indonesia. This dish can be regarded as one of Indonesia’s signature dishes. The main ingredient in making soup is kluwak nut, which as far as I know can only be found in Indonesia. Kluwak nut is what causes the black color in the soup. Very unique aroma and taste. For those of you who want to try making this dish, you can buy kluwak nut at an Indonesian shop. I bought a kluwak nut at toko24.de. In addition to online shopping, you can also buy at their store directly, namely Toko Indonesia located in Hamburg. But for those of you who don’t have a lot of time to cook this dish from the scratch, you can buy instant seasoning Rawon in Asian stores in your city, because various types of instant Indonesian spices can easily be found in any Asian shop.

  • 1 kg Oxtail (You can replace it with Beef or ribs)
  • 3 lt water (you can adjust it)
  • 3 pcs lemongrass (crush it with a tool such as meat tenderizer or mortar & pistil)
  • 4 cm ginger (crush it with a tool such as meat tenderizer or mortar & pistil)
  • 5 cm galangal (crush it with a tool such as meat tenderizer or mortar & pistil)
  • 6 pcs kaffirlime leaf
  • 5 pcs bay leaf

Spice Blend:

  • 6 pcs kluwek nut (open the nuts and and just take the flesh, we will only use the flesh)
  • 5 pcs candlenut
  • 8 pcs asian shallots
  • 6 cloves garlic
  • ½ tsp curcuma
  • 2 tsp coriander
  • 2 tsp cumin
  • 2 pcs red chilis
  • 4 tsp salt (you can adjust it)
  • 4 tsp sugar (you can adjust it)
  • 2 tsp beef powder
  • 1 tsp pepper
  • 3 tbsp cooking oil

Complementary ingredients:

  • Green bean sprouts (or if you don’t have it, you can use a normal sprouts that easily you can find in Asia Shop)
  • Duck salty egg (you can find it in Asia Shop, 6 pcs in 1 package)
  • 2 Spring onion (chopped into small pieces)
  • oast onion
  • Shrimp crackers



  • Boil water and add oxtails for 5 minutes. Then discard the water, the purpose is that we get a clean broth.
  • Boil water again and add the oxtails also a half amount of lemongrass, ginger and galangal. Cook until the oxtails tender. Set aside.
  • Finely chop the spice blend with a food processor until the texture is smooth.
  • Heat the pan and add oil. Saute the spice blend and add the other half amount of lemongrass, ginger and galangal, also add kaffirlime leaf and bay leaf. Cook until cooked and fragant (cook with low heat).
  • Add the sauteed spices to the oxtails stew. Heat the pot again and let it boil. Cook with medium heat.


  • Prepare a bowl and add the Rawon Buntut (Oxtail Black Soup).
  • Add green bean sprouts, spring onion and roast onion on top of it.
  • Prepare plate and add warm rice, duck salty egg and shrimp crackers.
    Diamonds are always obtained with difficulty, but the hard work in cooking these dishes is worth the taste.
