Balado is a type of hot and spicy dish from West Sumatra, Indonesia. Balado is suitable for prawns, fish, chicken, boiled eggs, beef, eggplant or potatoes. Eat Balado with warm rice. Trust me it will brighten your day.

Ingredients
  

Ingredients:

  • 6 eggs boiled chicken eggs
  • 6 long red chilies
  • 4 bird`s eye chili peppers
  • 5 cloves garlic
  • 8 cloves asian shallots
  • ½ tsp brown sugar
  • 2 pcs candlenuts
  • 3 cm galangal (crush it with a tool such as meat tenderizer or mortar & pistil)
  • 2 pcs bay leafs
  • 3 cm ginger 
  • 1 pcs Lemongrass (crush it with a tool such as meat tenderizer or mortar & pistil)
  • Salt
  • Pepper
  • Sugar
  • 4 tbsp water

Instructions:

  • Fried boiled eggs into golden brown (you can skip this step if you don`t want to use too much oil). And set aside
  • Blend the red chilies, bird`s eye chili peppers, asian shallots, garlic, ginger and candlenuts using food processor.
  • Heat the pan and add oil. Saute the blended spices until fragant.
  • Add galangal, bay leafs and Lemongrass. Cook until cooked and fragant.
  • Add a pinch of salt, sugar and pepper.
  • Add the eggs.
  • Add water and let the eggs absorbed the spices (more and less 5 minutes).
    Stir well. Serve. Enjoy it with warm rice
